Keto Friendly Coffee: How to Make Bulletproof Coffee

For weeks I'd been dreading the day that I would have to give up coffee. The Lord knows I love me some coffee!
For most of my adult life I've been a regular at Starbucks. Some of my favorites were Caramel Macchiato, Caramel Ribbon Crunch, White Chocolate Mocha, and the list goes on. Did it have sugar in it, topped with whipped cream, and covered in caramel? Then I was drinking it...everyday.
When I let Starbucks go (this is temporary; I heard there's a keto friendly Starbucks menu), I reasoned that I'll just make my own coffee at work (read: drink whatever coffee is already made in the break room) and add a few of those yummy hazelnut creamer singles. Well a few yummy hazelnut creamer singles turned into 4!
Fun Fat fact: Did you know there are 5g of carbs in just one of those singles? That's where most of my carbs were going! I don't even want to tell you how much sugar is in one. Actually, I will. There are 5g of sugar per creamer single! I was actually putting 4 of those in my coffee...everyday.
So eventually I scaled back from 4 to 3 to 2 and back to 3 when I was feeling rebellious. Then it dawned on me: "I've been able to substitute so many things since switching over to the keto lifestyle, I'm pretty sure I can do it with coffee."
nLo, and behold, thanks to a Pinterest search, I found the perfect substitute: Bulletproof Coffee! Such an odd name, but it does the trick. Just when I thought I had to give up coffee, keto surprises me again.
Now I would love to say that I've completely made the switch to Bulletproof Coffee, but I'm not going to lie, the convenience factor is where I get tripped up. I'm used to going to the break room, pouring a cup (or 3), and loading up on those sugary creamer singles, but those days are slowly coming to an end. I'm used to zipping into Starbucks and rattling off my order, or popping in a k-cup and going on about my day.
That's the problem isn't it? We're mindlessly eating; mindlessly drinking. Mindlessly ignoring the ingredients that goes into our food and drink because we want convenience. I'm not judging; just a revelation I realized in my own eating and drinking patterns.
Ok, back to Bulletproof Coffee (BPC). When you do your Pinterest search, you'll notice variations of the BPC. There are several BPC concoctions on the web, but the staples to recipe remain the same: coffee, coconut oil or MCT, and a natural sweetener. This really is a recipe that you have to play around with to be suitable to your taste buds. The first time I made it, it was terrible! I've been practicing and I think I've found a version of the BPC that I like.
For my recipe you'll need:
Stevia (or a natural sweetener of your choice)
Coffee (not pictured; I used Maxwell House)
Coconut Oil
Vanilla Extract (optional)
Heavy Cream
Cinnamon (not pictured) (optional)
Blender (not pictured)
Brew 10 ounces of your favorite coffee and pour into blender
Add 1/2 packet of Stevia to the blender
Add 1 tbsp. of coconut oil to the blender
Add 1/4 cup of heavy cream to the blender
Add 1 tsp. of vanilla extract to the blender
Blend for about 15-30 seconds. There will be a frothy-like texture on top
Pour into your favorite mug and sprinkle with cinnamon
