Keto Shrimp Alfredo Recipe

Don't let that picture fool you, there's no bread in this recipe lol! So, I'm in my third week of the Keto diet and while I'm down 9 lbs., I've already cheated...with french fries nonetheless! Wait! I can explain (well, not really). I got way too dependent on Keto friendly dining out. Sure, I would explain to the staff not to bring bread to the table or sub french fries for a salad, but one weak moment at Ruby Tuesday (they messed up my order) and I was in carb heaven for about 2 minutes. After this cheat I knew it was time to slow my roll on the Keto approved fast food and get back into the kitchen. It was time to cook!


Low Carb Shrimp Alfredo

Carb cravings can be brutal when you first begin the Ketogenic diet. Before the cravings hit, it's a good idea to load your Pinterest board up with Keto diet recipes and then hit the grocery store...stat! I'd been craving shrimp alfredo for the longest and was so happy when I found low carb pasta noodles and a low carb Alfredo sauce. I made Keto shrimp Alfredo with just a few simple swaps and ingredients. Shout out to Green Giant as I now have a Keto pasta substitute. Compared to traditional, carb-filled pasta, one pack of Green Giant's zucchini noodles has only 1g of carbohydrates per bag.



Now, to my favorite part: the Alfredo sauce. Whipping up Keto approved Alfredo sauce was easier than I thought. I only used garlic powder, Parmesan cheese, heavy cream, butter, and sea salt. This recipe is a great low carb lunch or dinner option, and will definitely satisfy you carb craving on the Keto diet. You don't even have to sacrifice the amazing, creamy taste of shrimp Alfredo! I've included the recipe below for you to give it a try. Also, excuse my poor quality in the picture. I didn't get to take a good one before it was all gone.

Ingredients:

  • 1 bag of shrimp (peeled, deveined, with the tail off)

  • 2 bags of Green Giant zucchini noodles (pictured)

  • 1 1/2 c of Parmesan cheese (shredded)

  • 8 oz. of heavy whipping cream

  • 1 stick of butter

  • 1 tbsp. of garlic powder

  • Sea salt to taste

Steps:

  1. Melt the butter in a saucepan on medium-low heat

  2. Once butter is melted, add the heavy cream, garlic powder, and sea salt; stir

  3. Follow instructions for Green Giant zucchini noodles while sauce is cooking

  4. Add parmesan cheese to sauce and lower the heat; stir until consistent

  5. Combine sauce, noodles, and shrimp to one saucepan; stir

  6. Enjoy!
